Chinese three threads chicken salad

  • Cinnamon sticks
  • Anise star

  • Cooking wine

  1. Boil the chicken with a small piece of cinnamon stick, a couple of anise stars, and a small spoon of salt, for around 8 - 10 mins.
  2. When it is done, take the chicken breast out, wait for a while when it is cool down, and shred the chicken by hands into thin ‘thread’.
  3. Chop the green pepper and carrot into very thin strips.
  4. Chop a small piece of ginger, couple of gloves of garlic and a half of spring onion into small pieces.
  5. In a hot wok, add in around 3 table spoons of cooking oil.
  6. When the oil is hot (not 100% hot), add in well chopped ginger, garlic and spring onion, along with 1 table spoon of cooking wine, 1/2 teaspoon of salt, and 1 table spoon of soy sauce.
  7. When the fresh smell raised up from the wok, turn down the fire, add a few drops of sesame oil.
  8. Place shredded chicken, green pepper and carrot on a plate, and pour the sauce on top of it, mix well.
