Hey, my first ‘come back’ recipe! Should have posted it earlier, but… have been sick. This stupid winter cold has caught me up, and lasted forever. So, take care, everyone, it is really nasty!! If you are having fever, try some Chinese cold remedy, actually, I have a post here which I wrote long time ago, might be helpful. Unfortunately it is no use for chest cough…

Surprised by the title of this recipe? Ha… yes, it is true — my first ever chicken recipe!!! I guess you might think this motherhood has really changed me, even my food preferences. :) :) Well, it is a little related, as I try not to let my own preferences  influence the little one’s taste, I’d like him to taste everything, then make choices himself, oh, and I really hope he will not be as picky as me, a bad example.

As I said from the very beginning, I have never been a fan of chicken. Don’t remember if I told you the reason why, a silly silly reason — when I was a little girl, I was so scared that chicken could come back to life in my stomach. Ha… Just because of something that silly I never liked eating chicken, especially chicken in the soup, which is the most popular way of making chicken in northeast China.

The only time I would eat chicken was when my most beloved auntie came to visit, she would bring ‘xun’ chicken made in her brother-in-law’s shop. ‘Xun’ means smoked, but it is totally different to smoked fish for example here. The chicken is very well cooked before  going through the ‘smoke’. Then my mum would pick up a small piece of meat (not letting me see the whole chicken or the bones), and that was the only chicken I have even eaten. Oh, dear, what a picky kid I was! I really cannot complain too much about Leo now, coz I used to give my parents plenty of headaches as well. :)

Sorry talked too much, this recipe was originally made for PG ladies, and it also can be used as a nice summer recipe, very simple to make. As I mentioned before, Chinese dishes very often combine different types of vegetables, and this one is not an exception — chicken combined with green pepper and carrot, that is where the name of the dish from — three threads.

It is really easy to make, takes about 15 — 20 mins. Here you go.

Ingredients:

A piece of chicken breast, a green pepper, a carrot

Cinnamon sticks, anise star, ginger, garlic, spring onion, salt, soy sauce, cooking wine, sugar, sesame oil, cooking oil

Preparation:

1. Boil the chicken with a small piece of cinnamon stick (sorry, in the photo, I used the only pieces of cinnamon stick I had left), couple of anise stars, and a small spoon of salt, for around 8 – 10 mins. When it is done, take the chicken breast out, wait for a while when it is cool down, and shred the chicken by hands into thin ‘thread’.

2. Chop the green pepper and carrot into very thin strips.

3. Chop a small piece of ginger, couple of gloves of garlic and a half of spring onion into small pieces.

4. In a hot wok, add in around 3 table spoons of cooking oil.

5. When the oil is hot (not 100% hot), add in well chopped ginger, garlic and spring onion, along with 1 table spoon of cooking wine, 1/2 teaspoon of salt*, and 1 table spoon of soy sauce.

6. When the fresh smell raised up from the wok, turn down the fire, add a few drops of sesame oil.

7. Place shredded chicken, green pepper and carrot on a plate, and pour the sauce on top of it, mix well

Ok, this is really the first time I cooked chicken in long long long time. … Yes, years ago, I learned to make chicken drums, according to my friends who ate them, they were very tasty, but believe it or not, I never even tried them myself. But this time, I really ate it. My husband found it really tasty, me… liked it, but found that the texture of chicken was still a bit strange to me, like it with the vegetables make it very fresh. Oh, you don’t have to put the vegetables in, just chicken alone if you prefer. Oh, also, if you like spicy, add a few drops of chilli oil is a great idea too!  Hope you like it! :)
